Would it be foolish to try to open a Mexican Restaurant in San Antonio TX?

I have a passion for food and want my own business . As I live in San Antonio with a High Mexican Population i am curious which would be more profitable a Mexican restaurant or A Russian/Eastern European restaurant/ bakery. There are few Mexican restaurants in San Antonio but there are no Russian/eastern European Restaurants. I was thinking of calling it The czars dacha.
